The fresh pomace from the Ribolla Gialla comes from selected suppliers and is stored in silos for several months immediately after the grape harvest. Distillation with direct steam is carried out in a discontinuous distillation plant with eight copper kettles to obtain a "raw" grappa with about 75° percent alcohol. In the distillation column, the volatile components coming from the distillation flask, which are particularly abundant in the original grape, are separated and concentrated. As the water-cooled coils pass through the column, gentle tempering takes place. Aging in stainless steel tanks for at least one year gives this grappa a better balance compared to freshly distilled grappa.Tasting notes:Colour: crystal clear. Nose: Sincere, fragrant.
