The alcoholic fermentation of Schioppettino marc takes place in the must, i.e. at the winery. It is distilled with direct steam in a discontinuous plant with eight copper boilers. The "heart" of the distillate is obtained through the prudent section of the first run (testa) from the second run (coda) by our master distiller. Flawless and balanced, it has an alcohol content of about 75°. The transformation to the final alcoholic content is done by dilution with water and cold filtration, at a temperature where the fruity component is guaranteed to be preserved. The red grape marc and its particular alcoholic fermentation create a distillate characterized by a round and balanced bouquet.Tasting notes:Colour: crystal clear. Nose: Sincere, fragrant.
