Pearse Lyons Distillery in St James was created by Pearse Lyons (born Dundalk), through his personal passion for the art of distilling and brewing. The distillery's two unique Copper Stills are located in the sanctuary of the historically restored St James' Church. These stills produce a range of small batch whiskey bottlings which are matured in ex-bourbon casks. The Founder's Choice is a 12 year old single malt Irish whiskey whose casks were personally selected by Pearse Lyons. Tasting notes:Colour: Rich gold. Nose: Orchard scents, white peaches, apples, notes of spicy pears, pine, spices. Taste: Dried oranges, hints of lemons, honeysuckle. Finish: Long lasting, soft, silky, warm notes of ginger and cloves.
