The Saint James Rums from Sainte Marie, Martinique, are fermented from fresh sugar cane juice. The Saint James Company grows most of the required sugar cane on its own land. The maturation takes about 4.5 years and takes place in American oak barrels. The Saint James VSOP gets its spicy vanilla character from the tropical climate in the north of Martinique.
