Andrew and Brian Symington founded the independent bottler, Signatory Vintage, in 1988. In 2002, Signatory Vintage was enlarged by the acquisition of the Edradour distillery. The "The Un-Chillfiltered Collection" of Signatory Vintage contains only whiskies, which were bottled at 46% volume percent and not cold-filtered. This whisky matures for 21 years in hogsheads. Distilled: 21 May 1997 Bottled: 16 August 2018 Tasting notes:Colour: Rich gold. Nose: Floral, lavender, crème brûlée, malt, creamy vanilla, honey, menthol, thyme. Taste: buttered toast, notes of sawdust, ripe pears, nutty chocolate, cumin. Finish: Long lasting, sugared almonds, sweet red apples.
